Soft and Chewy Oatmeal Raisin Cookies (Low Fat!)

Ingredients
  • cup whole wheat flour
  • cup all purpose flour
  • teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • teaspoon salt
  • cup mashed banana (use an overripe banana)
  • 2 tablespoons butter, softened
  • 1 cup unpacked brown sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 2 cups old fashioned oats
  • cup raisins

Instructions
  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine the firs six ingredients.
  3. In a separate bowl, cream together mashed banana and butter. Add sugar, vanilla, and egg and mix until combined. Gradually mix in flour and cinnamon mixture.
  4. Gently stir in oatmeal and raisins, then chill dough for at least 30 minutes.
  5. Scoop out dough onto a lightly greased cookie sheet. It should be roughly two heaping tablespoons of dough for each cookie, I got 15 cookies.
  6. Bake for 8-10 minutes or until tops are slightly golden brown. I left mine slightly under baked.
Notes
I've made these cookies with dried cranberries instead of raisins and they were great! You could also mix in ? cup walnuts, pecans, etc.
