- I have a feeling we will be eating these a lot more often!! They were inspired by the Fried Zucchini Spears you can order at Claim Jumper (which is one of my favs!!) I figure this is the healthy version of that. Sure, they’re not fried but they are still super delicious!
Parmesan Crusted Zucchini
Ingredients
- 3-4 medium zucchinis
- cup grated Parmesan cheese
- olive oil
- salt & pepper
Instructions
- {reheat oven to 350
- Cut the zucchinis in quarters, length-wise. Set aside.
- Line a baking sheet with foil.
- Place zucchinis on the baking sheet and drizzle with olive oil.
- Sprinkle on grated Parmesan cheese (and any other spices desired).
- Top with a little bit of salt and pepper.
- Bake for 12-14 minutes.
- Broil for the last 2 minutes until the cheese is more browned.
If you love zucchini, you’ll definitely want to try this simple and delicious recipe. You can also add or omit anything according to your likes. Some spray butter or sprinkled Parmesan cheese would be great on it too!
