教你做西餐厅里的餐前面包


大家对于西餐厅里的餐前面包应该不会陌生,只要稍微有点档次的西餐厅都会有免费的餐前面包提供!像这种面包,几乎是免揉的,所以口感略粗糙,但是你会发现,这样口感的面包真的是越嚼越香呢!



今儿呢,小编就教大家一款比较普遍的餐前面包~吃着略像粗粮的口感!沾着橄榄油醋绝对别有一番风味!



餐前免揉面包

No Knead Artisan Bread



食材:

温开水40?C左右,300ml

盐 7克

酵母(我用的是红星牌) 5克

多用途面粉(全麦无漂白的最好)330克

额外面粉 适量

油纸

玉米面(谷物粉)60克

1 1/2 cup warm water 100? F.

1/2 Tbsp salt

3/4 Tbsp yeast (I used the Red Star brand)

3 cups better for bread flour OR unbleached, all-purpose flour

plus extra flour for dusting

Parchment paper

2 Tbsp Cornmeal

这两种面粉都试用过,都很棒!


做法:

容器里倒入温水,加入盐和酵母,等1-2分钟,直到酵母融化

Add 1 1/2 cups of warm water and 1/2 Tbsp of salt to a large bowl. Sprinkle 3/4 Tbsp of yeast over the top and let it sit 1-2 minutes, then stir. It’s ok if it doesn’t dissolve completely.




在酵母水里倒入过筛好的面粉

Measure out exactly 3 cups of flour


用刮刀搅拌,直到面和水充分混合

Using a spatula, stir the mixture until it all comes together and is well blended.



用保鲜膜或者盖子将面团密封,然后室温发酵2小时直到面团扩大至2-3倍

Cover dough with plastic wrap or lid and let it rise at room temperature 2 hours (It rises about 2-3 times in volume).




垫上油纸然后油纸上过筛撒些干粉

Line a cutting board with parchment paper and generously dust with flour.


将面团取出放在油纸上


受伤沾一些面粉,将面粉均匀沾上面粉后折叠,再折叠,最后提起往里收,反正最后规整成一个圆球状即可。底下铺一些玉米面,更好的防止面团粘黏~增加香气!

With well-floured hands, fold the dough in half, then fold the dough in half again. Dust the dough generously with flour, lift it up and form a ball in your hands. Sprinkle the parchment paper with 2 Tbsp of corn meal extending about 1″ past the border of the dough since it will expand.




就这样静至40分钟左右,做第二轮扩大

Let it rise on the counter uncovered for 40 minutes. It will look like this when it’s ready to bake:


烤箱预热至220度,面包上用刀拉三个口子~烤这个面包需要两个烤盘,中间部分用来烤面包,而底部则需要一个装热水的烤盘进行水浴~这样烤出来的面包才完美!

You will need two shelves in the oven. The middle rack will hold the bread and the bottom rack will hold the water pan. For the bread, use a rimless cookie sheet in the center of the oven. You can also use a regular cookie sheet and turn it upside down. About 10 min before the dough has finished rising, preheat the oven and the cookie sheet to 450? F.


烤制20-25分钟,直到表面变成金黄色即可拿出!冷却后用到切片带一点温度沾黄油吃相当美味。

Slide the dough with the parchment paper onto the hot cookie sheet and bake at 450? F for 20-25 minutes or until golden brown.

Remove from oven and let it cool down a little before cutting into it.
