伊朗德黑兰的沙希德贝赫什迪医科大学(Shahid Beheshti University of Medical Sciences)的研究人员通过有效的食物频率问卷调查,将4881名没有患肾脏病的健康志愿者分为几组,分析他们的日常饮食对肾功能的影响。加工肉类消费量在前25%的志愿者的慢性肾病发病率增加了99%,而肉类(红色和加工)消费在前25%的的志愿者的风险增加了73%。研究人员发现,每份红肉可使慢性肾病的风险增加15%,而一份加工肉类可使风险增加28%。
