中国的酒，绝大多数是用粮食酿造的，酒紧紧依附于农业，成为农业经济的一部分。粮食生产的丰歉是酒业兴衰的晴雨表，各朝代统治者根据粮食的收成情况，通过发布酒禁或开禁，来调节酒的生产，从而确保民食。中国是酒的王国。酒的品种之多，产量之丰，都堪称世界之冠。中国又是饮酒人的乐土，地无分南北西东，人无分男女老少，饮酒之风，历经数千年而不衰。中国更是酒文化的极盛地，饮酒的意义远不止生理性消费，远不止口腹之乐；在许多场合，它都是一个文化符号，一种文化消费，用来表示一种礼仪，一种气氛，一种情趣，一种心境；酒与诗，从此就结下了不解之缘。
