Self-control the ability to regulate our attention,emotions and behaviors emerges in childhoodand grows throughout life, but the skill varies widely among people. Paststudies have reported that self-control is partially inherited and partiallylearned and that those with less self-control are more likely to be unemployed,engage in unhealthy behaviors such as overeating, and live a shorter life. Arecent study in the Proceedings of the National Academy of Sciences USA, whichties childhood self-control to health and well-being in adulthood, suggeststhat everyone, not just those most lacking the skill, would benefit from an improvementof self-control.
PsychologistTerrie E. Moffitt of Duke University and her team focused on the self-controlof a group of 1,037 children born in 1972 and 1973 in Dunedin, New Zealand. Theresearchers observed the children and took reports from parents and teachersevery two years from the ages of three to eleven. They evaluated the kids'attention, persistence and impulsiveness (冲动) in avariety of settings to determine each child's level of self-control. Finally,when these New Zealanders reached the age of 32, the researchers evaluatedtheir health, financial stability and court records.
The studyfound that children with lower self-control were more likely as adults to have poorhealth, be single parents, depend on drugs or alcohol, have difficulties withmoney and possess a criminal record.
In additionto surveying and ruling out intelligence and socioeconomic status as possible explanations,the team explored whether differences in upbringing could play a role. To test thisidea, the Duke researchers turned to 509 pairs of British twins born in 1994and 1995. The team examined the twins' self-control at age five. The siblingwho had less self-control was more likely to begin smoking, behave badly andstruggle in school at age 12.
Moffittnotes that within the Dunedin group, the more self-control a child had, thebetter off he or she was as an adult. "Even children who are above averageon self-control could have improved life outcomes if they increase theirself-control skills," Moffitt says. Programs that teach self-control in school settings, for example are effective. Thus, the Duke team believes,increasing self-control skills during childhood could give all kids a betterfuture.

Imagine summer without the refrigerator: hot days with nocold beer, no ice for your fruit drinks, and...probably very little fresh foodat all. Artificial cold is key to every part of our current food supply chain,from the farm to the grocery store to the table.
But when it was first introduced in the nineteenthcentury, industrial refrigeration (制冷) facednegative reaction from the public. In a 2008 paper, Susanne E. Friedbergexplains why, focusing on one refrigerated daily food: the egg.
To illustrate the importance of refrigeration for eggs,Friedberg notes that they used to be a seasonal food. Before modem breeds weredeveloped, hens laid most of their eggs in the spring. That meant that fresheggs were unavailable or very expensive for most of the year.
Artificial refrigeration promised a solution. By 1904,Friedberg writes, there were more than 600 cold-storage warehouses in the U.S.One facility in Boston had room for 150 million i eggs at a time.
But many customers were unimpressed with these newfacilities. That was partly because, at first, cold storage often wasn't donevery well. Warehouse managers didn't always know what temperature was best forvarious kinds of food. Eggs stored for a long time sometimes developed a"fruity flavor," probably thanks to being kept near apples.
Another reason for consumers' distrust of refrigerationwas actual untrustworthy behavior by companies. Some merchants put food intocold storage when it was already going bad. Retailers bought the stored eggseither with blind faith or accepted the situation as one for which they werenot responsible and which they could not remedy.
Traditionally shopkeepers and customers would haveassessed the likely quality of eggs based on the season and the reputation ofthe farmer, but now they had no way to do this. Often, they blamed cold storageitself for low-quality eggs.
The increasing economic power of large companies thatcould store millions of eggs also worried the public. When prices startedrising rapidly in 1909, newspapers reported on a questionable refrigerated"food trust." One letter to The Washington Post that year complainedthat sellers secretly worked together to keep prices high. "Cold storageis responsible for the prices they charge," the writer argued. "Theyhave thousands and thousands of eggs, but keep them in the refrigerator, inorder to keep prices high."
Warehouses, poultry (家禽) producers,and the USDA responded with a pro-cold-storage public relation campaign thatincluded booklets and movies, and even free omelets (煎蛋卷)at public health exposition, but customers were not convinced.

When I firstset foot on Mexican soil, I spoke relatively good Spanish. I was by no meansfluent, but I could hold a conversation. So when I asked a local ice-creamseller in downtown Guadalajara when he expected a new delivery of chocolate icecream, and he said "ahorita," which directly translates to"right now," I took him at his word, believing that its arrival wasimminent.
I sat nearhis shop and waited, my Englishness making me feel it would be rude to leave. Halfan hour passed and still no ice-cream arrived, so I timidly wandered back tothe shop and asked again about the chocolate ice cream. "Ahorita," hetold me again, dragging out the 'i' sound in "Ahorita." His face wasa mix of confusion and maybe even embarrassment.
I was torn.Waiting longer wasn't appealing, but I felt it was impolite to walk away, especiallyif the ice cream was now being delivered especially for me. But finally, after waitingso long that I'd built up an appetite for dinner, dark clouds appeared overheadand I made a rush for the nearest bus to take me home. As I left, I signaled upat the sky to the ice cream seller to let him know that I obviously couldn'twait any longer and it really wasn't my fault. His face was, once again, one oftotal confusion.
As I sat onthe bus, rain pattering on the windows, I replayed the conversation in my headand decided indignantly that the ice cream seller was a liar.
Thisincident faded from my memory until years later when I came back to live in Mexico.I discovered that cracking what I came to call the "ahorita code"took not a fluency in the language, but rather a fluency in the culture.

Americansare famous for working hard. Sometimes, though, life needs to take priority overwork, and the U.S. is well-known for lacking in policies that support employeeswho need to take time off when it does.
