Turkish Pide 土耳其面包配番茄酱料黑橄榄奶酪

Turkish Pide with Tomato sauce, Black Olives and Cheese (Domates, zeytin ve Peynirli Pide)

土耳其面包配番茄酱料,黑橄榄及奶酪

 

Ingredients serve 4 原料4人份

 

Dough ingredients 做面团的原料

7g instant yeast 7克速溶酵母

1 tsp sugar 1勺糖

1 3/4 cup (560ml) warm milk 560毫升温热的牛奶

4 cup (800g) all plain flour 800普通面粉

1 tsp salt 1勺盐

1 tsp olive oil 1勺橄榄油

 

Tomato sauce ingredients 做番茄酱料的原料

1 onion, finely sliced 1个洋葱,切细

1 garlic clove, chopped 1个蒜瓣,切碎

2 cups diced tomato, in a can (if you like, add more.) 2杯或350~450克罐装的番茄碎(可以根据需要,加更多。)

Salt & Pepper 盐和胡椒

 

Topping 浇头原料

20~25 black olives, seeded, cut in half (do not use olives from a can) 20~25个黑橄榄,去籽,切成一半(不要用罐装的橄榄)

1/2 cup feta cheese cut in cubes 半杯或40克飞达奶酪,切成块

Kasar cheese or Mozzarella, sliced 卡萨奶酪或莫扎瑞拉奶酪,切片

Oragano 奥利伽奴

Crushed pepper 现磨胡椒

 

How to make tomato sauce----怎样做番茄酱料

1.   Sauté the onion with olive oil in a sauce pan for few minutes and add garlic, cook until the smell comes out.

在炒锅里用橄榄油煎洋葱,炒几分钟后加蒜瓣,翻炒,直到炒出香味。

2.   Add the tomato, salt and pepper and cook until almost all the juice evaporates with the lid on.

加番茄,盐和胡椒,翻炒,盖锅盖煮,直到汤汁蒸发,收干。

 

How to make dough----怎样做面团

1.   In a small bowl, mix the yeast, sugar and 1/4 cup warm milk. Stir well so the yeast dissolves. Let it rest for 15 minutes.

在一个小碗里,将酵母,糖和1/4杯温牛奶,充分搅拌,使酵母溶解。

2.  In a large bowl, sift the flour and salt. Add in the bubbly yeast mixture and 1 1/2 cup warm milk. Mix and place the dough on the lightly floured counter. Knead well for about 10 minutes until it becomes smooth (no more crumbles).

在一个大碗里,把面粉和盐过筛,加入带有泡沫的酵母和剩下的1杯半温牛奶。拌匀,并把面团放在撒有薄面粉的桌面上。充分揉捏10分钟,直到面团变得光滑为止(没有碎屑)。

注意,手握成拳头,用指背压面团,而不是用手指。

3.   Then spread 1 tsp of olive oil with your hands all over the dough. Then cover it with a clean, damp towel. Put aside for about 1 to 1 1/2 hours at room temperature until the dough rises to double its size.

然后手上粘上橄榄油,将油涂满整个面团,盖上一块干净而润湿的布。放在一边在室温下醒发1至1个半小时,直到面团发成两倍大小。

4.   Place the dough on the lightly floured counter. Press all over with your hands to get rid of any air bubbles. Cut the dough in 4 pieces with a knife. Knead and give a ball shape to each, cover with a damp towel, and put aside for about 15 minutes. Then use a roller to flatten each one.

把面团放在撒有薄面粉的桌面上,用指背将面团压成饼状,将面团里的空气压出来。用刀将面团切成4份,盖上润湿的茶巾,静置15分钟,然后用擀面杖擀每个小面团。

5.   Place baking paper on an oven tray, then arrange one flat dough (or two if it fits) on it. Spread some tomato sauce on the surface. Arrange olive halves, white cheese (feta cheese) cubes, and Kasar (Mozzarella) cheeses slices over the top. Brush some olive oil along the edges.

在烤盘上铺蛋糕纸,将一个或有足够空间放2个压平的面皮放在烤盘上,在表面撒上番茄酱料,放上切成一半的橄榄,飞达奶酪块和卡萨(莫扎瑞拉奶酪)条,在饼的边缘刷橄榄油。

6.   Preheat the oven to 225c and put some water in an oven safe bowl, place it at the bottom of the oven. Place the tray on the middle rack and bake for about 10 minutes.

烤箱加热至225度,在一个烤箱碗里加水,放在烤箱内的底部,将烤盘放在烤箱的中间,烤10分钟。

7.   Before serving sprinkle oregano and crushed red pepper over the top, slice it up and serve while still warm with Ayran.

上盘前,在饼上撒奥利伽奴和压碎的红椒,切成条,成热吃,可配土耳其酸奶饮料。

8.   It could be served with tomato soup with cream, lamb with grape leaves, zucchini with olive oil and Gullac.

与土耳其面包相配的菜有番茄奶油糖,羊肉煮葡萄叶,节瓜和橄榄油及古拉克甜品。

 Ayran和Gullac一样,是土耳其传统饮料和甜品,她们的做法,在下周的菜谱里将有介绍。

土耳其面包,欧洲人喜好称之为“中东披萨”,的确,她们跟披萨没有太大的区别,只是披萨饼胚是用水做的,而土耳其面包用了牛奶,所以前者偏硬,更有嚼劲;后者外脆内软,牛奶可以是面粉的结构变得松软。

今天我用土耳其面包做早餐,所以没有用很多的料,只是加了炒熟的白芝麻,少许陈年车打奶酪和橄榄,而新鲜炒好的番茄酱料,就做为Dip。改天老公出差回家,我会做一顿真正的土耳其面包餐,有酸奶饮料,番茄糖,和传统甜品。。。
